I bought two tri-tips on Wednesday costco with sell by dates of the 21st and 23rd... I planned on cooking them today in the smoker and wasn't thinking about the dates when i purchased them. Thoughts...? They have been kept at 37 degrees in the fridge since that date.

Just checking in to see whether @Killer95Stang is still among the living. :p

Wish I took pictures... I used a dry rub that I put on right after I posted, then put the two 3.5 pound tri-tips on the Kamado smoker at 250-275 degrees. Only took about 65-70 minutes to reach the 135 internal temp, which was way shorter than i anticipated. After i pulled them off, i wrapped in foil then placed them in my lunch box until guests arrived. A few minutes before serving i put them on a hot grill to char the surface before slicing. Paired with my favorite Stubbs sauce, it was pretty good, but we also had so many varieties of food at dinner so it was hard to judge. I liked it, and I didn't die, I will take it as a win...!!
