A question for the Mason and stone guys

This is the start of the coping. Is this how it's supposed to look on a curved edge? Is there a better way? They have cut them and laid them, but have not been set yet

That’s sloppy in my opinion. I’ve seen worse (here!) but it’s not acceptable. More of the coping should be cut for a more fluid curve, not just those few.

Edit-the outside should be a smoother curve too.
 
I know it's unfinished. Will all the gaps stay?
Or will they fill them with something?
Shouldn't the gaps be close to the same size?
Am I supposed to seed the white line under the wall? Will they hide that somehow?

Any insight would be great. I just want to it done right the first time

I think they can get pretty close, but obviously there is only so much you can do with curving the wall with flat stones/bricks. The tile work definitely isn't up to par, it's hard to tell on the curved wall in pictures.
 
The wall block looks like it's Techo-Bloc 'Brandon' Wall. The gaps do not get filled with grout. They should be butted up tight. Not hard to do.

Edit: The reason you see the larger gaps on the vertical seams is because it's on a pretty tight radius. To remedy this they would need to be cutting the block in a similar fashion to how they did the bullnose.
