It depends on the stone and the finish. A quartzite can be finished to give a smooth texture, although you have to be careful not to make it too slick. Ask for samples to feel for yourself. What stones types are you considering?

"Flagstone" can be a fairly generic term, and quality and composition can vary quite a bit from one supplier to the next. It might be best to consult the stone supplier directly to ask about available finishes, composition, suitability for intended use, longevity etc. as well as samples.
Consulting a stonemason might be worthwhile.
Here is a post where the poster used flagstone. Perhaps you could ask them how they like the stone and what exact stone they used.
