Using the pool calculator and setting the FC goal to 7, I'm told I need to add 3 gallons + 2 quarts of Bleach (6%). Does that sound right? Are there any other chemicals I need to be adding?

That is the correct amount of bleach to add to raise the FC up to 7 from 0. How does the water look? Most likely you still need to go through the shock process. You will want to lower your pH some before you start shocking. Get some chlorine in there NOW and test in about an hour. If you want you can lower the pH after that.

Sounds correct. Since it went to zero I would recommend pushing it to shock level (26ppm) and checking the overnight losses before going further.
