Has anyone ever thought about mixing a very thin mixture of portland and marble dust and rolling it over the pool with a paint roller to "renew" the look. Just a thought.

It wouldn't bond properly with the layer of plater it was applied to and would end up flaking off fairly quickly.
It likely would not hold very well. Plastering a pool is an art in itself and has to be done at a specific consistency/following proper curing procedure to avoid cracking/spalling and I'm afraid a thin layer would just chip/wash away after a year or 2, if not sooner, just like pool paint
