Removing Heater and Replumbing

Hello, I want to remove my dead heater. I rarely used it prior and not sure I want to replace. Any suggestions on how to replumb (see pic)? I thought about placing a U pipe where the gray connectors are going to the heater. I assume I would remove the gray connectors to make it work. I want to make it simple and not affect the flow.

You do not need that check valve either without a heater. I would cut off the 2 white 90 deg elbows and then connect the 2 pipes together with whatever spacing you need. You may look at using either 1 or 2 - 45 deg angle fittings to get the ends to line up.
