My pool heater shows "Remote tstat enabled". I've never looked to see if it said this before, but I think my pool heater may be coming on by itself. So here are my questions:

1. Should the pool heater always say "remote tstat enabled"
2. The pool heater also shows that the Spa is set to 101 and the pool is set to 90 on the display, should it be saying this? What does this mean?
3. While the pool heater still states 101 for spa and 90 for pool, on the iphone app I turned those settings down to 34 degrees for each, but it still shows as 101 and 90 on the heater, is that normal?
4. What does it mean when the pool heater shows "standby" on my iPhone app? (I turned this off)

I'm running the iAqualink app on my iphone. (I still have the old Jandy Remote)

All this is normal. Remote means aqualink is managing it. The temp in the heater should be set to the max. Aqualink will turn it on and off per the set point in aqualink. Standby means it's on and reached the set point.
 
As an example, this morning the equipment came on, and the pool heat was on and on said standby. The big issue here is that we don't want the pool heater coming on by itself, but every morning it comes on and shows "on" and "standby"

From within the app go into the Web version (upper right of Home screen), click Menu and click Schedule. Do you see where the heater is scheduled to automatically come on?

It doesn't come on by itself. It only comes on if you have the spa heater or pool heater set to "on". Can you show a screen of that? On your pic above it is not on.
 
Set Temp controls if your heater comes on. You have Set temp to Pool 34/Spa 34.

ON and Standby simply mean if you raise Set Temp above the water temperature then the heater is ready to turn run and generate heat.
