Remove and replace cementitious material between coping stones

Plan is to remove existing material with dremmel and or small angle grinder, then replace with Sakrete mortar mix while avoiding doing damage to anything. Probably 10% of the stone joints need redone.
Should I be using a different material?

Pool is 12 years old.
Grout mix. Sorry, that is a broad term to my old mind.
Tile grout, latex grout? Guess I'm pretty overwhelmed here. Seems like bathroom/shower tile grout would be good.

Yes sir, I'm gonna try a small chisel/hammer as well, just trying to avoid any damage and making more work.
That angle grinder with a masonry blade might help as well.
 
The good mason around here is using an exterior rated tile grout
