Are these coping edges acceptable? I know the polymeric sand/grout will smoothe out the final look but should I accept this or should I ask for new coping with clear sharper edges?

That's one of the byproducts of working with concrete... it chips and cracks. Once they install the deck-o-seal caulking in that joint, you will not notice.
