I would not quite yet, that CC is high and there is a chance the cal hypo is not mixing as fast as bleach would.

Night. If the spouse can pick up some chlorine/bleach and add it during the day, that would be even better.

You have to pass all three criteria at the same time
1) The water is clear. And that means even after brushing the walls.
2) CC is .5 or less
3) You lose less than 1 FC overnight.
It's all in the SLAM Process instructions
I would do another 10-15 minute test of the FC and CC with the bleach to be sure the ammonia issue is gone before adding CYA and SLAMing
I think you are pretty close to overcoming.
Hold on, what FC level are you targeting? Was the 6.5ppm before or after the 3 bottles/gallons?
3 bottles (121 oz) of 8.25% bleach would add 9.6ppm of FC
3 gallons (128 oz) of 10% bleach would add 12ppm of FC

You should have put your current test result (6.5) in the now column and the target (10) in the target column. You only needed to add 3.5ppm ... not the 9.6ppm that the 3 bottles added.
So I would expect your FC to test up around 16ppm if it is not quickly consumed by the "ammonia"

No, you are not wasting chlorine. If you add CYA to 30, you want to MAINTAIN an FC level of 12 until you pass a slam. Congrats getting over the ammonia!!!!
