Hi, I need to move to another State for at least 2 years and I do not know what to do with my pool... removing water can damage the pool, covering it as it is happening in Winter ? What will happen to the water in Summer ?... Please help !

Not really an easy answer. If the water isn’t treated, you can get mosquitoes which will probably make for unhappy neighbors and likely fines. A mesh tarp cover is probably the best option, but somebody needs to keep an eye on the cover in case wind moves it or something blows onto it. If you use such a cover you need to be sure access is controlled since falling on such a cover is very dangerous.

If you can't get someone to look after the pool (who is looking after your house?, then I would suggest contracting with a local pool store to check on it at least monthly.
I'd put a solid cover over it, a cover pump on that, and have someone check on the pool routinely.
