Yes. Over the first year as your plaster cures, your pH will be rising a good deal. Couple this with the fact that you operate a SWCG (also raises pH constantly), daily additions of MA will likely be needed. You might consider bringing your TA down a bit. This will help.

Welcome to TFP! I'd get your pH down. You really want it between 7.2 and 7.8. It's critical that you keep your pH in check during this first year that your pool is up.

Pollen at this time of year seems kinda unlikely. My guess is that you probably just depleted your FC and didn't fully compete the SLAM process. SLAM the pool and do so until your FC holds to within 1 ppm or less of loss overnight, your water is clear, and your CC is 0.5 ppm or less.

Well, first off, you can't really rely on your pH reading too much because you took the sample from water that wasn't circulating. The water really needs to be circulating for a while before you can reliably draw an accurate sample. Secondly, the temperature of the water makes a big difference...

Some granulated chlorine products can sit atop the water in certain amounts long after being added. Did you add any powders or granules to your pool?

Very nice pool! I had a Baracuda G3 for a while. As far as suction side cleaners go, they are top notch. Wearable parts like the fin disk and such are cheap and easy to replace.

If you have a freeze guard on your timer and don't expect problems from lotsa debris getting in the pool, you can probably stay open. Either way really.

Based upon your location, you would likely benefit from having a heater. I'm not sure about the comparisons between gas heaters and heat pumps. Others can chime in on the pros and cons of each.

Although an ozonator provides a little help, they are best utilized for indoor pools where you don't have the benefit of sunlight to break down your CC.
