Nice job and glad you can fix the butt crack jet. With all those jets you have a lot of flexibility. Let me add to the choir you're gonna hear keep that concrete wet every day twice per day. You can cobble together some 1" pipe with crosses and pieces of pipe to support and cover the entire thing with 3 sprinklers. If you have a zone that covered where the pool is now just splice into it and use your sprinkler control. I did this for a month on mine. Concrete experts claim this gets you 50% better strength.

So far I've been able to get out and walk the perimeter, with a cup of my favorite beverage, and hose it down for about 15-20 mins, 4 times a day Thankfully, the weather has been moderate. PB says I should have 2 weeks before tile. I'm good with that considering the folks I have met in our development, with new pools, have never watered theirs even once. To paraphrase Robert Duvall - 'I love the smell of Gunite in the morning.' :)

what kind of plaster are you using and is he doing a bond coat before plaster?
