Ok I will start it off with my Over The Top Chili. You’ve probably seen this on the internet. You cook the chili in a Dutch oven on a smoker with a 2lb loaf above the chili. As the meat cooks, it drips into the chili. Once the meat is at temp (about 2 hours) you break it up and mix it into the chili and then let the chili cook for another couple of hours.

I had thought it was a crazy recipe but decided to try and it was surprisingly good with a good smoke taste

That looks great @Hammond! FedEx can get me a bowl by tomorrow 🤣

My wife taught me this stupid simple bread recipe... A slice would go great with that chili.

Mix 1 1/2 tsp salt with 3 cups flour (whatever you want, but keep at least 1.5 cups white), mix 1/2 tsp yeast in 1.75 cups of 110 degree water and once it starts activating, mix into the flour/salt. Cover with a cloth and leave overnight to rise before baking... Form up a loaf and bake... I do 375 for 40 mins in a cheap convection toaster oven (It's done at 200 degrees). This loaf was 1.5 cup white, 1 cup wheat, 1/2 cup cornmeal.

If you love to tinker with bread, give this one-armed Jesuit a chance. We’ve had so much fun trying out most everything. We have our favorites, of course.

Cool, I've done smoked chili with cubed stew meat in a basket in the smoker. Never thought to put the chili below it. The more smoke flavor, the better. Thanks for sharing and starting the 2025 thread!

You want a great Arugala salad? Arugula, thin sliced fresh fennel, naval orange segments cut in 3rds (lets that yummy juice out) then just dress with s/p, good olive oil and a little wine vinegar. Favolosa! Also yummy with crumbled goat cheese tossed in before dressing.
