Temperature Probe Testing - Need Guidance

I have purchased a new air probe with a longer wire to move my air probe away from the equipment pad.
I tested the probe with an ohm meter and recorded 13,700 which equates to 64 deg F however my digital thermometer next to the probe recorded 68 deg F. Is this the margin of error I need to live with? The probe has not been installed yet. It is sitting on my workbench for testing.

How do you know your digital thermometer is correct?

Does your digital thermometer have a probe? Put them both in a glass of water.
 
Put them both in a glass of water.
Put them both in a glass of ice water. That way you know the correct answer.

Edit: You could also put them in boiling water to get a 2 point check. This would tell you if you have an offset problem or a scaling problem or maybe both.
