I don't think this will be a problem when the pool is finished. But if it's bugging you, make them fix it. It's not trivial, but it's not that big of a deal to correct.

No, I think for what you want the plaster would have to be too thick. I was saying that the riser heights can be fixed with extra work by the PB (steel and concrete work).
