Newly renovated, need help deciding about the spa

My pool sits on a hill, such that the pump and filter is below the pool. The main pool is easy as I can insert threaded plugs at the skimmer for the main drain. The spa side is hard because if water is in the spa it wants to gravity feed down to the pump area - meaning water is in the freeze zone in the pipes.

When the ‘pros’ closed my pool my first year they did not drain it completely and of course water was in the lines.
When I closed it the last few years I did not drain it and I didn’t get any damage. I just sucked as much out as I could then put in antifreeze.

I have now spent 20k on new tile and plaster (not due to damage but age) and don’t want to ruin the plaster.

we are well above the water table on top of a hill.
What to do about the spa? Does it need to have water on the plaster all of the time?
