Builder should be able to tell you the estimated gallons based on the pool dimensions.

haven't gone into the plumbing plan of the pool yet to determine where it will be placed. What should I be looking out for?

You need to see if the builder properly sets the levels in the pool for the maximum water level set by the overflow, the normal water level set by the middle of the skimmer mouth, the minimum water level set by the autofill, and how much the water level can vary between minimum and maximum. Many builders don't pay attention to the details that then mess up the pools operation which you need to live with long after the builder is gone.

And the levels affect the waterline tile sizing, skimmer mouth sizes, and other levels in the pool.

There are many ways an overflow can be installed. Some are better then others and some hardly work.

Also discuss where the overflow will drain to.
