Fiberglass Pool Coping

Hello All,
I’ve searched the forum. Looking for a final word or advice:

Brand new leisure pools 30x14 pool in the ground. 15” bond beam collar poured. The PB’s concrete sub poured my collar level with the 4” fiberglass lip of the pool.
After using mortar to adhere bluestone coping to concrete collar there is a 1/2”-3/4” gap now between the fiberglass pool and bottom of the bluestone coping stone. The mortar raised the stone. If you’re in the pool looking up at the coping stone it’s 1/2-3/4” above the fiberglass pool edge.
**what is the best product to use to fill this gap: epoxy grout, polyurethane caulk, or Sikaflex???

Hello, my contractor just did this and I'm wondering if i should insist that he grind down the bond beam before installing the coping. What did you end doing with yours? do you have pics that you can share?
