Can stamped concrete be restamped?

Why not have them come out and score a tile pattern? Probably not going to be able to get that French pattern but they could do a boarder with say a 18x18 diagonal tile look. No skim coat required doing it that way. Might be able to get a similar look to what you wanted and a discount too.

So what is the process for re stamping and is it likely to look good after? From what I understand they have pour at least another 1/4 inch on top of this at which point will it still be level with the coping?

Are those expansions joints or saw cuts? Maybe the mason can create some pattern suitable to your taste with a saw. I have seen some creative cuts and patterns, but that will take some time, depending on pattern and size of your concrete.
