Bullnose Coping

Hello, Last fall we had Techo Bloc Blu 60 installed around our pool. We used bullnose pavers for the coping. The mason we used insisted on using glue to secure the 12 x 6'' coping (pavers). He was gluing it to a 2-3'' steel wall of the pool while laying the rest on the base/sand. there is no mortar bed which we suggested. Naturally, without even swimming in the pool yet (New England winter), a few stones are loose. that may be because he forgot to glue them or they came up from the winter.

Being that he is coming back to fix the loose stones, what is the best way to address this? Is gluing a coping paver to a 3'' steel wall sufficient to make sure these do not come loose and fall into the pool ripping the liner or falling on someone? Cement/mortar bed? Grouting it? or is some adhesive good enough? i attached a few pictures, including, how his glue dripped onto our liner in a few places. Thanks!

My patio guy was on team construction adhesive and when I pressed him with what ifs, he was adamant it was an easy fix to reglue any stones that popped.

Mine are glued on the back of the stones and overhang kinda like a diving board in spots. It's not a large gap but I'm midway done with caulking the gaps so splash water doesn't sit in there and eventually freeze.

Around the stairs it was a fingerwide gap and when the polymeric sand failed, he came back and grouted the gap.

Found pics that showed the before/ after. They used polymeric sand at first and it crumbled. They came back and used grout.

The liner guys were lazy and when the liner fit loose in the track, they hammered it down every 6 inches so the line is real wavy. I started filling those gaps with black caulk that would hide well with the charcoal stones. It got cold when I was halfway around the pool and I'll finish this year.
 
I did steel mesh on top of the steel walls, and then a big old bed of Laticrete 254 on the wall and behind. I used type S mortar for the grout between pavers.

I did use adhesive for the coping around the fiberglass stairs.
 
I think mine were just set in mortar. The corners by the stairs I think they were glued.

So far two winters and they are still all attached. Probably just jinxed myself.

FYI, with mortar there will be a fair bit that gets into the pool and it's annoying to vacuum out when the water is murky.
