If the pebble finish has been severely etched, that can result in a "lightening" of a colored finish. (Actually it is the colored cement portion that lightens). That would not be a good thing if true. That would mean that the acid wash guy over did it. You should also asked the PB if any calcium chloride was added to the plaster mix. In combination with other issues, that can also contribute to a lighter color result.

On the other hand, it is still possible that a white residue formed on that bottom area while the pool filled with water, and after the acid wash was performed, because the acid wash guy did not do a "good job" of removing the plaster residue when he was finished. I am surprised that the PB hasn't performed a simple acid test (directly on a particular spot) to see if any white residue is removed and leaves a darker area.

I agree with the others that keeping the pH low for a few months makes little sense. It is unadvisable, probably won't work, and potentially detrimental to the entire pool.
