So I'm going to follow this site to a T, for my new pool. Pool school says no swimming during the break in period for starting up new plaster, question is how long is the "break in" period considered?

Hey good for you and your pool. At least your in FL and will have some extra time to swim. Has to be a little frustrating though, and I doubt I would stay out for long.
We just finished an install at my house and the PB filled the pool as soon as the plaster guys were done, he told us brush like mad for a few weeks but to go ahead and gently use the pool the day after the fill. We did and the stuff was rock hard on day two. So far no issues whatsoever. This plain old plaster, maybe its different in my parts but its basically concrete here.
