Coping install and Grout question

Coping was just installed and we noticed all around the pool some of the grout on the backsides does not go the whole way down. We did check all underneath where it meets the tile inside the pool and that is ok. Got pictures from a friend who built a pool and all of theirs was the whole way down. Another visitor stopped by and theirs was also the whole way down. Supervisor stopped by and said that was normal. Not sure what to believe. Don't want issues in the future. We are getting pavers not concrete.

As long as the brick coping is properly mortared in, I don't think there's a problem with the grout. You're in florida so you don't need to worry about water in the gap a freeze cracking. Actually, it's pretty good to get grout that deep into the gap.
