2nd year with pool, can't remember a couple of things

When we set up the pool and fill it, do I go ahead and test the water after getting the salt in? Do I go ahead and add bleach after testing to get chlorine up since it takes a while to build it up with the SWS?

Yes. Yes. Don't forget to get some CYA to keep the sun from burning the chlorine off as fast. Use poolmath to verify the amount you need to add.

Yes, you want to start out with a little FC to hold you over until you starts generating it on your own with the SWG. Once you are filled, go ahead and run a full set to see where you are, and if you post them as mentioned, we can help if you need it.
