So, how long, and what temperature is involved with that? And...what kind of wood? I'd guess Hickory out there, or something else?

This little piggy weighed 110# and was cooked at 225 for about 18 hours. Mostly charcoal with some wood

Congrats on placing so high in the competition. I wish I would have known about this so I could attend. We have so many festivals here it is hard to keep track of them all. Maybe we need to have a TFP convention down here!

Great Job mk1. I built this on a bet with my father in law some years ago. I found some plans/idea on the internet and said "I think I can build this buy the 4th of July." He said "you build it by the 4th I'll buy the pig." That was 11-12 years ago. She'll keep 225 degrees all day and night with wood.

IIRC couple racks of ribs and a brisket for the 4th 2013 when pic was taken.
