I added some CYA and would like to test the water, but Pool School says to wait a week before testing. I'm curious as to why it takes a week for CYA to show up on test results.

CYA dissolves very very slowly. It doesn't usually take a week, but it can sometimes take that long. It is safer to not risk it, wait the week, and be sure you are getting the full reading, rather than risk a false low reading, then adding more, only to end up with too much and need to replace water to get the level down.
Another confounding factor, CYA can break apart into tiny grains which will continue dissolving slowly even through they are gone from the sock (or whatever you are using). So just seeing that all the CYA is gone from the sock doesn't tell you that the CYA has actually dissolved.
