Green connects to the chassis ground screw. This is below the yellow wire and labeled GRD.
One of red and blue connects to each of the "line" locations in the diagram (either one to either location). Those two locations are both terminals between yellow and black wires (one at either end of the yellow and black wires).

Does that mean that one connects in between the yellow and black on the variable speed switch and one connects between the yellow and black on the motor? And does it matter which connects where?

Yes, assuming the other ends of those red and blue wires is at the L1 and L2 terminals on your timer or breaker The green wire should have a ring terminal on it not a push on blade terminal for safety reasons, and goes to the ground screw seen just under the green wire where it arches in the photo.
Started up and it ran for a couple of hours then just stopped?
Could I have damaged it if the red and blue wires were out of order?
