Does anyone know what the difference is between the various Jandy temp sensors? 7784 vs 7785 vs 7790?

Only the length of the wire. Each sensor is identical and can replace one another if necessary, distance of wire permitting.
Just be aware Jandy temperature sensors and Hayward temperature sensors are not interchangable, they have different response curves, which has to make you wonder about those that are sold as generic replacements for both
