Pavers have a couple of issues. Anchoring safety covers can be more difficult with a paver deck, and getting a good electrical bond to the deck can be harder with pavers. You may want to discuss bonding the paver deck with your installer.
Stamped concrete can have issues with slipperiness, so you need to make sure your installer understands the need for sealers that aren't slippery when wet.
