Can I temporarily use a 3/4 hp pump start capacitor in a 1 hp pump? that is until I can get a new one Monday.

The actual capacitance and voltage rating determine whether you can use it, not the motor size. The value will be in mfd or ?F.

The capacitor I want to "borrow" is a 25 from my whisperflo fountain pump and the one I want to replace on the whisperflo filter pump is a 30.

IRRC if a substitute is required you are supposed to only go up one size. It may or may not work. The risk is you could burn out the motor starter winding (which means a new motor).
