Would it be Ok to turn off my pump for a week if I'm going on vacation. Pool will be fully covered so no contaminants can get to the water. Current pool chemistry is:

pH = 7.5
FC = 3
CC = 0
TA = 90
CH = 320
CA = 40
B = 45
Temp = 70F
Water looks crystal clear

I was going to lower my pH a little, because plaster is 6 months old and pH does rise a tenth or so every few days. I was also going to boost my FC to around 5 or 6.

I'm thinking this will be just fine, but I thought I'd better be safe than sorry and check with the experts.

Thanks

You should raise the FC up to shock level (FC of 16ppm) before you cover the pool. Circulate it for at least an hour before you turn the pump off.
It would be better to have the pump on a little bit each day just to circulate (even 1-2 hours).

Even with these precautions, you may return to some green and need to go through the shock process.
