Our pool should be in and ready for water no later than Wedenday/Thursday. My question is should I test the water from the hose or just wait until the pool is full and then test or do both?

It's not a bad idea to test your tap water for pH, TA and Hardness before you fill. Then you'll know which direction you'll be moving pH so you'll know what to have on hand. IF CH or TA are way out of range, you might need to find alternative fill water.
Yep, test the fill water. Post your results up on the forum and you'll get lots of good advice. You'll be ready to adjust your pool from day one!
