While cleaning my pump basket I have to endure an aggravating flood while getting the lid off and on (and turning the lid is tough enough). I have one stopper that I put in the skimmer but I cannot remove the eveyball off the return to stop it. Is there any filter setting that I can use to at least limit the pressure while doing this?
Remove pump lid without water gushing everywhere...

I don't know about filter setting but you should give some thought to installing valves on the plumbing to and from the pool. Then, it's just a matter of turning the valves off when you have to open the pump basket. And remembering to turn them back on.
Some multi-position valves have a closed setting that turns everything off. That will prevent water from the return from getting to the pump. You still have to block the skimmer manually or install a valve there.
