Will salt adding help to curb potential harm from CH of 500 in 20,000 gallon pool?
Thinking about 200lb of salt, to balance CSI
Also, does the salt suspend the calcium or how does this work?

Yes, but not by all that much. By adding a lot of salt you can lower the calcium saturation by roughly the same amount that lowering the PH by about 0.2 would, which is roughly the same as lowering the CH level by 190. (All numbers approximate.)

Usually preventing calcium scaling is done in other ways, typically by lowering TA and/or PH. But I suppose that raising the salt level could be used as part of an approach to preventing scaling. However, you don't want to raise the salt level too much or you can have corrosion issues. You want to keep salt below 6000 ppm to avoid salt related problems.
