cyanuric acid level

Hello, I was in the pool store over the weekend and I heard one of the employees telling a customer that cyanuric acid never changes once it is in the water. I am relatively new to pools but I have browsed through many of the posts here on this forum and the posts on poolforum.com. I have concluded that cyanuric acid does 'burn off' over time. Is this correct? Thanks in advance.
 
I believe some pools see a drop in CYA over the winter, and the proposed cause is organics in the water that consume the CYA, since the pool is not being sanitized. But for the summer, most do not see a drop in CYA unless they have to backwash to waste, have a leak, or drain some water.
