Why is TA rising?

It should stay constant under normal conditions until you add acid. Adding acid always lowers TA.

Your plaster is old/fully cured, so there is not much reason to believe that you could be leeching alkalinity from your pool surface itself. If you could post a full set of test results, that might be helpful.
 
CYA 30 -35, very subjective
CH - 310
FC - 6
CC - 0
TA 7 goes to 8 in one week after adding fill water in the summer
PH - 7.5 - 7.8, once rises above 7.8, I lower to 7.4, about once a week

When I add acid to lower PH, TA also gets lowered to 7
