I don't want to over-think this but given that DE has some negative respiratory issues, how is the best way to collect/dispose of the spent back-wash material?

Scoop it up while it is wet.
Or you could buy a DE separator to install on the backwash line.

A DE separator...hmmm, never knew they had those. Am I just being paranoid about the dangers of DE left on the ground?

Depends if you have kids or animals that might be getting into it I suppose.

A "nosey" dog yes, kids I doubt. Pool is on an acreage so maybe I could dig a hole and cover. Just curious what people do with the stuff?!

If you are concerned ... switch to cellulose fiber ... no more worry and it is biodegradable. 
The slime bag people also make a DE capture bag although they don't suggest using it for all of your DE discharge, it is more of water conservation device.
Thanks guys, I couldn't find a way to delete this thread after discovering the other thread. I think trying to use some kind of disposable filter bag at the end of the discharge hose seems like a possibility.
