Skimmer replacement

Hi all, first post, first pool.
Replacing concrete skimmer with Waterway Renegade plastic on inground gunite.
Ready to set new. Question is height of new skimmer throat bottom is 2" below pool dam to skimmer. Is there any option to cutting down pool face to match? Can I slope downhill for 3" to new skimmer or let water fall a couple inches into skimmer? Thanks.

Ok I'm a bit lost here. First can we get a picture. That would really help.

Are you saying that you have jacked up the concrete and removed the skimmer (formed into the concrete) and are about to install the new plastic Waterway skimmer and its 3 inches lower than the prior formed skimmer? Like I said a picture (or 3) would help.
 
Sorry to leave this hanging. Had to move forward. Was able to adjust so skimmer bottom is just 1 inch below dam with a 45 degree transition with local advise so I trust that is sufficient. Will have to trim down top so lid sits a bit lower, but do-able.
