When adding DE I notice that it isn't sticking to my filters. When we go to clean the filters a majority of the DE is sitting at the bottom. I have a Pentair FNS Plus.
The majority of the DE should drop off the grids/cartridges when the pump is off. As the DE collects more dirt it will begin to clog the grids/cartridges and be more difficult to clean. Are you seeing a problem with the quality of your water?
That's normal. Ideally, the DE falls off the grids completely. At the next startup, when it's all churning, the heavy stuff - sand and grit - fall to the bottom and all you have is nice fresh DE on the grids.

The water quality is good. We cleaned the filters on Wednesday and when we inspected them on Thursday there was only DE on the top portion of the filters & the remainder was on the bottom of the tank.
