So I seem to have not installed my skimmer correctly and it is leaking...

I really want to just throw some caulk around the inside where I think the leak is coming from, but I assume the correct way is to remove the skimmer, trim back the wall foam, and reattach the skimmer...

I'm just checking for info on how much wall foam I need to remove (just from the seam that I couldn't cut out, or the whole size of the skimmer so there's no wall foam behind the gasket), I don't want to remove it all the way if I don't have to, especially since the screws really wanted to strip when I was putting them on.

You can use white pool putty to stop that leak, or silicone. The silicone will not dry under water like pool putty does.
I think I'm too paranoid about foam absorbing the water / letting it leak where I can't see it to use the putty/caulking on it. Once I cut the foam out of the area, if it still leaks then I'll break out the sealant...
 
Since my insurance eliminated any coverage for above ground pools 30 years ago, my experience with them is limited to pumps and filters, sorry.
You do want to stop that leak from inside the pool, so an epoxy compound like Pool Putty would be the best shot. It will stick to plastic, even wet if pressed in well. Not always pretty. Have used it on inground skimmers.

Sooo on the other thread I linked above, I was asked about the skimmer gasket... which is a butterfly gasket... and I did NOT install it correctly... took off skimmer, put gasket on correctly, put skimmer back in (sorta - its just not tightening down, but the screw heads are also stripping, so it makes it super hard)
