Brent I was right there with ya till it took a drastic turn for the worse. Brussel sprouts! :pukel:

Rob Brussels sprouts are great steamed and add salt and pepper. It is a cousin of the spinach family and look what it did for Popeye the sailor man [emoji67]
 
Ok guys I hate to brag on this but 3 days later and it is delicious. Left over Osso Bucco with fresh garlic and basil pasta and garlic rolls [emoji482]
The Marrow from the bones is to die for [emoji39]

Yeah, Osso Bucco is my #1 favorite dish. I will order it any time I see it on a menu. I first had it as a teenager in the restaurant I worked at and I practically licked the plate clean. And yes, the soft marrow is probably the best way to end the meal....looks great Brent!!
 
as i check out the new cite i figured i would eat my favorite breakfast. left over pasta fried. i think this is an italian thing cause whenever people who aren't italian see me reheat pasta this way they don't get it. :) lots and lots of butter and just let it crisp up to burn it a bit here and there. sooooo good!

as i check out the new cite i figured i would eat my favorite breakfast. left over pasta fried. i think this is an italian thing cause whenever people who aren't italian see me reheat pasta this way they don't get it. :) lots and lots of butter and just let it crisp up to burn it a bit here and there. sooooo good!

Tonight is make your own pizza night. I’m experimenting with cauliflower crust these days (grain free, gluten free, paleo/keto friendly). Here’s one with fresh tomatoes, prosciutto & freshly grated mozzarella -

Not really, it’s actually quite flavorful. The cauliflower provides the vegetable fiber to the crust but it also has egg, cheese, oil and spices blended into it. So it provides a lot of taste for very little carbohydrate impact. It’s texture is similar to a thin-crust style pizza.

As a family we have greatly reduced our consumption of processed foods, white flour and sugars. We’re not totally paleo/keto but our diet is much more plant-based and most of our caloric intake comes from fats & protein. As such, it’s had an impressive impact on our general health; my wife has completely “fat-converted” over in her daily energy needs (her diet is almost totally ketogenic). We have some serious genetic/familial predisposition to type 2 diabetes on both sides of our family so eating healthy is very important to us.

But of course, anyone that has read my cooking posts knows that “the Italian force lives strong within me...” :ROFLMAO:
 
My body can’t function without white flour based food. Lol. I crave bread. Lol.

I think we eat healthy in general. All fresh. Nothing frozen or processed that much. We try. But like u said the Italian in me has a very large pulling force.

Be careful with the low carb stuff, as it’s all a balance game. The body needs carbs as a source of dietary intake, moderation is key.

I did the Atkins diet years ago, lost 90lbs in 6 months. (I stayed on induction the whole time. Under 20 grams of carbs a day) Well, fast forward a decade, and I gained it all back.

I read a paper published in the medical journals that stated, a body is programmed from birth to be a certain size, and will fight constantly to maintain that size.
Now with that being said, a person can yo yo diet all their life to be thin, but the body always wins.
Again, it boils down to moderation, and being active with moderate exercise.

I’m perfectly fine being 6’4” 300lbs, as that is where I’ve been since my late teens.
My nickname from my friends is “Skinny”, because they all say I’m the skinniest 300lb man you’ll ever meet! :cool:

Jim I’m right there with ya!!

My wife and I eat very little processed foods, most of our grocery shopping is done on the perimeter of the store, very little from the isles.
When we buy pasta and such, it’s always whole grain, and we avoid high sodium products like the plague!!
