Backwashing is for sand and Diatomaceous Earth filters. If you have a cartridge filter, you wont do it. It just means running the water backwards through the filter to dislodge all the crud and send it out the waste pipe instead of back to the pool.
Vacing is vacuuming. Just like vacuuming the house, but using the pool pump and filter and a very long hose and pole.
 
Most sand and some DE filters use a multiport valve to change filter settings. Backwash is a self cleaning setting to wash the debris out of the filter when it is too full of stuff to work effectively. It works really well on sand filters, and ok on DE filters.
I think vacing is a typo for vacuuming. Or maybe its pronounced "vacking".
