Tonight I have my inlaws in town. Making some spatchcocked heard roasted chicken.
Cut the bird in half. Sprinkle with salt over night. Mix equal parts of parsley, sage, rosemary, oregano, thyme, Basel, bay leaf and pepper. Add half part of sugar. Combine equal parts of herbs and oil and let sit for 1 hour. Rub on bird (and under skin) 3 hours before grilling. Grill at 325 till done.
Here are mine just on the cooker.
I like to add a little apple or cherry wood for a hint of smoke. Doesn't take much. These should take me about a hour to cook. I'll post picks when it's done.
Tonight's gonna be shishka-bobs. I beat the heck out of some tritip strips I got on sale with a meat hammer and put them to soak in some Lowreys mesquite-lime marinade. The meat'll get skewered with some bell pepper, onion, and mushrooms.
