BBQ dessert with BACON

I was challenged to come up with a BBQ dessert. This is what happened.

Wrap firm bananas with applewood smoked bacon. Cook low and slow at 250 for about 3 hours till bacon is crisp. Place "Monkey Pigs" in a sliced Twinkie. Cover with chunky peanut butter and bittersweet chocolate chips. Warm on the grill for 5 minutes and serve.

I present the "Monkey Pig Chilli Dog" (no chili or dog, but that is what it looks like to me)

Question, I don't have a smoker... yet, just a classic Weber charcoal bbq. How low and slow we talking here, and why? Is that so the banana doesn't explode, or melt all over the place?

Whole pineapples done on the rotisserie with cinnamon sugar (carmelized) are also a very good bbq dessert.
