It was creeping to the ~7.8 range and I added too much acid and now I'm around 6.8. Should I be concerned or should I let it right itself?

Since the PH test shows any PH below 6.8 as 6.8, it is best to raise the PH right away until you get it to at least 7.0.
Low PH can damage the pool/equipment. If the PH is really 6.8 the issue is very minor, but if you went way over it could be fairly significant.
