Wifeys Jalapeno Pepper Recipe

1 can mild jalapeno peppers, drained- these are half peppers
bacon

Filling:
8 oz. package fat free cream cheese---room temperature
1 cup shredded fat free cheddar cheese
3 or 4 triangles Laughing Cow flavored cheeses
today: 2 triangles of sundried tomato and 1 creamy Swiss
I have used roasted garlic, bleu cheese or Weight Watchers jalapeno
1/3 to 1/2 cup Hormel Real Bacon Bits
salt/pepper to taste
garlic powder to taste

Cream together filling ingredients. Spread onto peppers.
Cut bacon slices in half. Wrap each pepper with bacon and secure with tooth pick.
Grill on pepper griller or aluminum pan that has holes on the bottom.
Grill low to medium till bacon is cooked.

This usually makes 12-15 peppers. Easily doubled.

Sometimes I have added diced green onions or diced green candied jalapenos.
Just whatever is handy and looks like it would be good...LOL!

Finally got her to write it down per requests. Fat free cheese is the biggie to prevent runs, drips, errors, and scorching. Easier grill cleanup too!
 
Too funny. I picked up one of the chili holders (not a TX one) at my local supermarket. It was on clearance. I also got a 16 inch pizza stone for about $10.

Looks like I need to smoke me some peppers.
 
I made these yesterday, except I used fresh whole jalapenos - massive hit!
I also added in a little smoked cheddar to each one.
