Wanted to know if I should be worried about a gap between the coping and the concrete apron around the pool. A lot of water ends up going between the two. Is this going to be a problem or should I put something like caulking I between the two

Absolutely should be caulked. I like polyurethane. Strangely, PB's often do not include that as part of their responsibilities....I have no idea why.
