When the pool water goes through the pump, is the water itself grounded to the pump's ground connection?

Usually. The water is electrically connected to the bonding lug on the pump. Most, but not all, pumps connect the bonding lug to the ground wire.
Why do you ask? The whole bonding/grounding thing gets kind of complicated. Depending on what you are actually trying to figure out grounding may or may not have anything to do with it.

I just want to be on the safe side. Actually I used a multimeter to do some checking today, the pool water is indeed "connected" to the bonding lug on the pump which is grounded to the main panel.
The crucial thing for safety is that the pool be properly bonded. Bonding is different than grounding. Bonding means that all of the metal parts within several feet of the pool are electrically connected. That way any possible current will flow through the wire instead of through you or the water.
Connecting the bonding system to ground is of debatable value. There isn't actually much point in debating it, because the bonding system is almost always connected to ground anyway (because of the way pumps are designed). Still grounding brings both advantages and disadvantages. Some countries require the bonding system be connected to ground and other countries discourage it.
