    First time grilling ribs

    Yesterday I took my first stab at spare ribs on the grill. Soaked in apple juice, used a 9 spice rub, and apple cidar vinegar to mop (simply used a spray bottle). The oven thermometer I used read about 190 degrees, but I'm sure my grill was hotter than that as the rack finished in 2.5 hours not including a 20 minutes foil covering with the bbq sauce applied. Used hicktory chips to get a nice smoke and indirect grilled on a 18.5" CharBroil coal grill. Plan to use the drippings to marinate some wings. Wife loved them so all is good in my life, lol.

    Yeah...with the grill temp at 190, they would have never finished. If they were done in 2 hours, you were somewhere above 300..maybe up closer to 400.
