Yesterday I took my first stab at spare ribs on the grill. Soaked in apple juice, used a 9 spice rub, and apple cidar vinegar to mop (simply used a spray bottle). The oven thermometer I used read about 190 degrees, but I'm sure my grill was hotter than that as the rack finished in 2.5 hours not including a 20 minutes foil covering with the bbq sauce applied. Used hicktory chips to get a nice smoke and indirect grilled on a 18.5" CharBroil coal grill. Plan to use the drippings to marinate some wings. Wife loved them so all is good in my life, lol.
